Pink Savory is less common than Winter Savory and Summer Savory. Both culinary and ornamental, its one of the ingredients in the Middle Eastern spice mixture, Zatar. Pink Savory may be used in any recipe calling for savory, a little different but quite nice. A woody-based subshrub, it's tough and drought-tolerant, about 1 foot high and two feet wide, dense and compact. The pink flowers (that can be used as a garnish) cover it from May until mid-June. It's also sometimes known as Savory of Crete where it grows on Crete's dry, rocky hillsides. This is one tough, pretty, and useful xeric plant.
