This choice Northwest native has attractive, nectar-rich, yellow mini-sunflowers in spring. It will be long-lived if given a dry resting period when dormant during midsummer. The leaves resemble fuzzy mule's ears and the flowers bloom on short stalks. The edible shoots can be eaten raw; the edible roots can be eaten raw or cooked (sweeter). Roasted roots have historically been used as a coffee substitute. (This is not intended as a suggestion; always do your own research with regard to the edibility of any plant.) The roots are substantial and the plant resents being moved once situated.
